What’s the secret to a light and fluffy scone? Hannah’s Home Bakery reveals how to make perfect scones every time.

Ah, the great British scone. A perfect accompaniment for a cup of tea or coffee shared with friends on a lazy afternoon. I have made many versions of scones and with a lot of practice, I have finally adjusted an old recipe to perfection. Scones remind me of a dear friend, I will call her Ness, who lives very far away from me. When I am feeling particularly remote from her, I find myself in the kitchen making up a batch of these so I can ‘share’ them with her over a Skype video call.

Have you ever bought a store-bought scone from a grocery store or at a café and been really excited to gobble it up, only to find out that it is rubbery, stale, hard, crumbly or chewy? I have, so disappointing. After having said experience one too many times I was determined to create my own recipe so I would never have to feel disappointed again. There are many variations of scone recipes out there, some call for lemonade, butter, eggs, milk, vinegar and even soda water. However, I have found the combination of cream and butter milk to be the most successful resulting in light and fluffy scones, without a fail every time.

The most important thing when making scones is to be gentle and quick with the mixture. If you mix the dough too long, they will be tough and yuck. Another crucial step when making scones is too have a hot oven and to place them on the tray close together. The hot oven plus placing close together will give you an even better rise which is exactly what you want. This recipe is really quick and easy to whip up if you suddenly have a craving to eat some delicious scones. The best part about this recipe is that it freezes well (winning!) so you can always have some on-hand for those unexpected guests!!
